After graduating from high school, Vinoy began studying theology to become a priest. After a few semesters, however, he decided to pursue a military career and joined the royal guard of the French army in 1823. As a sergeant in the 14th Infantry Regiment, he took part in the campaign in Algeria in 1830 . He became an officer after the capture of Algiers and remained in Algeria until 1850, where he was promoted to colonel . From 1850 to 1853 he was back in France. In 1853 he commanded the first brigade of the second division of the expeditionary force in Kabylia .

During the Crimean War (1853-1856) he served as Général de brigade under the command of François Certain Canrobert . For his services in the Battle of Fort Malakoff , he was promoted to Général de division . During the Sardinian War in 1859 he also led his division in the battles of Magenta and Solferino on June 24, 1859. Here he fought under the command of Adolphe Niel in the IV French Army Corps .

Due to age, he retired in 1865, but was recalled to active service when the Franco-Prussian War broke out in 1870. He became commander of the XIII. Corps that was only put into march some time after the outbreak of war. Due to this delay he avoided defeat in the battle of Sedan , he only got as far as Mezieres . He succeeded in the security group of VI. Corps under Tümpling to evade and as the only still intact large formation of the French army to reach Paris on September 7, 1870. During the siege of Paris , Vinoy commanded the third army and directed all operations in the southern section of the city. After the previous commander Louis Jules Trochu had resigned due to the defeat in the Battle of Buzenval on January 20, 1871, Vinoy took over the supreme command of the defenders of Paris. Against the resistance of the government under Léon Gambetta , which wanted to continue the war in any case, he began negotiations on surrender.

During the fighting with the Paris Commune , he commanded a corps of the Army of Versailles and occupied the burning Tuileries Palace and the Louvre on May 23. On April 6, 1871, he was appointed Grand Chancellor of the Legion of Honor . In 1877 he was elected senator. Joseph Vinoy died on April 29, 1880.
