Lahmacun [ lahmaˈdʒun ] (formed from Arabic لحم بعجين, DMG laḥm bi-ʿaǧīn  'meat with dough'), also called Turkish or Armenian pizza , is a flatbread made from yeast dough , which is thinly coated with a spicy mixture of minced meat , onions and tomatoes before baking .

The dish is a traditional snack in Turkey , which is usually eaten hot straight from the oven . Similar dishes are also known in the Arab world .

origin

It is widely believed that Assyrians were born as early as the 2nd millennium BC. Knew a similar dish and Greek merchants brought it to Greece . The Assyrians invented a technique that made it possible to shape the dough extremely thinly. The dish from the Middle East was adopted by many cultures.

preparation

For preparation, a simple dough made of wheat flour , yeast , water, salt and possibly a little oil is rolled out into millimeter-thin, plate-sized cakes. These are coated with a mixture of raw, minced lamb and / or beef , tomatoes, onions, garlic and paprika pulp , which is seasoned with cumin , sumac , pepper and salt and baked directly on the floor in a stone oven.

Lahmacun is traditionally served with pieces of onion and a lemon quarter . Lemon juice is drizzled on the flatbread, spiced with Pul Biber to taste and sprinkled with smooth, chopped parsley, rolled up and eaten out of hand. In German-speaking countries, Lahmacun is also served with a salad, sometimes with a sauce ( cacık ) or rolled up kebab as a snack.
