Maltol is a cyclic, unsaturated ether and flavoring agent found in malt and caramel . It is used as a flavor enhancer in confectionery and is approved as a flavoring in food.
use
In food flavors with a caramel note, as a flavor enhancer, e.g. B. in fruit flavors (already effective below the taste threshold of approx. 5 ppm) or in lemonades as a partial substitute for sugar.
