Uribe lived as an illegal immigrant in the United States from 1987 to 2000 , first in Florida and later in Dallas, Texas. He made a living there repairing PCs and other office machines. It was during this period that he gained the most weight. In the summer of 2002 he was bedridden and was cared for by his mother who lived with him. The marriage ended in divorce two years later. In 2007 he weighed 561 kg. By April 2008, he had reduced his weight by 192 kg to around 369 kg. In October 2008 he married his long-time partner for the second time. The wedding was broadcast live on the US television station Discovery Channel . In February 2012, his weight was 196 kg. Manuel Uribe was admitted to a clinic in Monterrey at the beginning of May 2014 for arrhythmias. He died in the hospital weighing 394 kg after a stay of more than three weeks.

After he was bedridden, he only left his apartment twice: once for his wedding in 2008 and once when he was admitted to the hospital in 2014. Both times, the Mexican civil defense had to lift Uribe out of the house with a crane.

Uribe set up a foundation to warn of the consequences of obesity.
