Marco D'Andrea (born November 4, 1989 in Frankfurt am Main ) is “ Pâtissier of the Year 2020”, awarded by Gault-Millau .

biography

D'Andrea grew up in Langen (Hessen) . His father is of Italian origin ( Corigliano Calabro ), the mother German ( Frankfurt am Main ). The family was in the fruit and vegetable trade and D'Andrea was confronted with it at an early age. After completing secondary school, he began training as a cook with Karlheinz Hauser on the Süllberg in Hamburg . After his training, in 2010, he spent a year as a pastry chef in the Vendôme restaurant in Bergisch Gladbach with Joachim Wissler (three stars, Michelin Guide ). In 2011 he moved back to Hamburg on the Süllberg to Karlheinz Hauser (two stars, Michelin Guide). As Chef Pâtissier, he was in charge of the sweet areas of the restaurants, catering and hotels from 2011 to 2016. In 2017 he devoted himself to a new challenge and accompanied the opening of the 5-star luxury hotel " The Fontenay " on the Outer Alster in Hamburg as Executive Chef Pâtissier . In the hotel's gourmet restaurant “Lakeside”, the team managed to boast its first Michelin star in the first year. D'Andrea is particularly known for his afternoon tea at The Fontenay. One of his signatures is the dessert “The Ring” with the shape of a ring. The taste is adapted to different, seasonal products and it plays with different textures and temperatures.
