Sodium isoascorbate is made from isoascorbic acid.
use
Sodium isoascorbate is used as an alternative to ascorbic acid as a food additive (E316) as an antioxidant and color stabilizer . It is only permitted for heat-treated cream, dried or frozen fish with red skin, preserved fish products and cured and otherwise preserved meat products.
