The Noma is a restaurant in the Danish capital Copenhagen , the two Michelin stars awarded. The name Noma is a syllable from the Danish words "nordisk" (Nordic) and "mad" (food).

The kitchen under the head chef René Redzepi cultivates a creative interpretation of Nordic dishes, which preferably consist of local products, especially fish, local vegetables and various, also unusual, local herbs and ingredients.

Noma has been voted the best restaurant in the world four times (2010, 2011, 2012, 2014) by Restaurant Magazine .

history

When the Noma was opened in 2003 by Redzepi and its main owner, the Danish chef Claus Meyer , the two chefs were inspired by recipe ideas from a survival manual of the Swedish army , which described how to use gifts given by nature in times of war would get by.

Locations

From 2003 to 2016 it was located in Nordatlantens Brygge , an 18th century storage building in the Christianshavn district of Copenhagen , Strandgade 91. In July / August 2012, while the restaurant in Copenhagen was being renovated, the Noma team moved for the 2012 Summer Olympics to the five-star Claridge’s hotel in London .

In the following years, the restaurant closed temporarily to serve as a pop-up restaurant abroad : 2015 in Tokyo, 2016 in Sydney, April and May 2017 in Tulum , Mexico.

In February 2018, the Noma moved to its new location on the ramparts of Christianshavn in a purpose-built building.

Documentaries

In 2008, Danmarks Radio produced a documentary entitled Noma på kogpunkteet (Noma at the boiling point ), which portrays the work of the chef. The film caused quite a stir in Denmark because of the harsh working atmosphere that prevails behind the scenes at the posh restaurant.

In 2015 the British documentary Noma - A look behind the scenes of the best restaurant in the world (original title: Noma - My Perfect Storm) by the French director Pierre Deschamps was produced; it opened in German cinemas in February 2017.
