René Redzepi (born December 16, 1977 in Copenhagen ) is a Danish chef. He is the head chef and co-owner of the Noma restaurant in Copenhagen, which was named "Best Restaurant in the World" by the British magazine Restaurant in 2010, 2011, 2012 and 2014 . He also runs the Barr and 108 restaurants .

Career

Redzepi has an Albanian father from North Macedonia and a Danish mother. He moved with his family to Macedonia in what was then Yugoslavia and lived there until the beginning of the Yugoslav wars .

From 1993 to 1997 he worked at Pierre-André's Michelin-starred restaurant in Copenhagen. Then he trained with various great chefs, with Thomas Keller in The French Laundry in California, with the Pourcel brothers in Le Jardin des Sens in France and in Ferran Adria's world-famous El Bulli restaurant in Spain. The end of 2001 he returned to Copenhagen as a sous chef at Restaurant Kong Hans Kælder at Thomas Rode Andersen to work.

In November 2003 he opened his restaurant Noma in the Nordatlantens Brygge warehouse in Copenhagen- Christianshavn . It was awarded the first Michelin star in 2005 and the second in 2007.

In September 2004, Redzepi and Claus Meyer , co-owners of Nomas, organized the New Nordic Kitchen Symposium , at which chefs drafted a manifesto that was approved in its entirety by the Nordic Council of Ministers . Redzepi toured the Nordic countries for seven weeks to study Nordic cuisine and found special products such as horse clams and deep-sea crabs from the Faroe Islands , algae , skyr from Iceland and musk ox from Greenland, birch sap , arctic blackberries or cloudberries .

René Redzepi is married and has three daughters. His wife works as a writer, among other things.
