Simon Tress

Simon Tress (born March 2, 1983 in Riedlingen ) is a German organic chef , cookbook author and restaurant operator. He cooks regionally; if he uses meat, then the whole animal.

Career

Tress is the son of a farmer and a housekeeper . In 1950 his grandfather Johannes Tress brought the biodynamic idea to Ehestetten and converted the family's farm according to Demeter guidelines. In the meantime, the classic farm has become a medium-sized organic company that Simon Tress runs with his mother Inge and the brothers Dominik, Christian and Daniel.

Tress was team captain of the youth national team from 2003 to 2007 and member of the German national team of chefs. At the International Kremlin Culinary Cup in Moscow, he and his team cooked up seven gold, one silver and three bronze medals. He is also involved in the German football team of Spitzenköche & Restaurateure e. V.

Tress was trained from September 1999 to August 2000 at the Bavaria Hotel Management School in Altötting . He then worked at the Hotel Vier Jahreszeiten am Schluchsee until 2002 . In 2003 he cooked in the guest casino Minister of the Ministry of Defense in Berlin , in 2004 in the Hotel Quellenhof in Aachen , in 2005 in the Traube Tonbach in Baiersbronn and in 2006 in the Palazzo of Harald Wohlfahrt in Hamburg . Since 2006 he has been the operator of the Biohotel-Restaurant Rose in Ehestetten.

Since 2009 he has had various TV appearances, including a. with coffee or tea and the national show in SWR and the ARD buffet , as well as in VOX The perfect celebrity dinner .

  • 2010: Award for Discovery of the Year from Weinwelt magazine
  • 2010: Winner of the Hospitality Career 2010 as Young Manager of the Year in the Gastronomy category
  • 2012: Joined the Association of Top Organic Chefs and since then Germany's youngest top organic chef
  • 2014: Ambassador of pleasure from the state of Baden-Württemberg , awarded by Agriculture Minister Alexander Bonde (together with mother Inge and his three brothers)
  • 2017: Best sustainability concept 2017 , Schlemmer Atlas (together with mother Inge and his three brothers)
