Wilbur Scoville
Wilbur Lincoln Scoville (born January 22, 1865 in Bridgeport , Connecticut , † March 10, 1942 in Gainesville , Florida ) was an American pharmacologist .
He was working for the pharmaceutical company Parke Davis in 1912 when he developed a test to measure the heat of chili peppers, the so-called Scoville Organoleptic Test (colloquially Scoville scale ). The capsaicin content is measured indirectly by diluting it up to the perception threshold.
He received two awards from the American Pharmaceutical Association : the Ebert Prize in 1922 and the Remington Honor Medal in 1929 . Also in 1929 he was awarded an honorary doctorate from Columbia University .
