Most of the vineyards are at an altitude of 570 to 750 m above sea level. the sea level between the lakes of Petres and Vegoritida . The climate is already continental with a pleasantly warm summer and a cool winter, in which snowfall is not uncommon. In summer, the climate values correspond to those of the Bordeaux growing area . Amyndeo has the coolest climate of all OPAP wine regions. Of the total of 1,236 hectares (as of 2001) of Florina's vineyards, almost half is attributed to the designation of origin Amyndeo.

In particular, the soil in the vicinity of the lakes are rich in nutrients, so there to maintain good grades through consistent vine training must be carried out a strong yield reduction. Mavro Naoussis , which is called Xinomavro here , is the only permitted grape variety that may be processed into dry, semi-dry or semi-sweet wines within the legal requirements . The majority of the red OPAP wines, however, are made dry. Some winemakers also make a white wine from the red Xinomavro. These so-called Blanc de Noirs wines can be excellent, but are not permitted in the regulations of the Amyndeo cultivation area and must therefore be marketed as the Topikos Inos (Τοπικός Οίνος) Florina wine . This also applies to the white sparkling wines from the variety.

Compared to the red wines of Naoussa , which also sorted are made from Xinomavro, the growths of Amyndeo are lighter. They have a fruity character and the tannin content is less pronounced.

Amyndeo is the only designation of origin with an OPAP character in which rosé wine plays a significant role. A significant amount of sparkling rose wine is also produced. The Charmat method is usually chosen as the production process , which gives the wines a less complex but more pleasing character.

Major producers of these wines are the wineries Alpha Estate, Kir-Yianni, Domaine Karanika and Hatzi Winery.
