Bacillus cytotoxicus is a facultative anaerobic bacterium from the Bacillus cereus group. When free oxygen is present ( aerobic conditions) it shows faster growth. It forms endospores .

The type strain was isolated in a severe case of food poisoning in France. Of all the bacteria of the Bacillus cereus group, it is the most distant from the family. A polymorphism in the cytK gene makes it molecular-biologically distinguishable and at the same time more cytotoxic than other representatives of the group. On Mossel Medium, there is an atypical small area of ​​precipitate for B. cereus . Growth takes place from 20 to 50 ° C with the best growth occurring at 30 to 37 ° C. This can also be used for differentiation. The differential diagnosis can also be carried out using an FTIR spectrometer and artificial neural networks . There is a high prevalence of Bacillus cytotoxicus in instant powder for mashed potatoes and other dehydrated potato products . Other dried foods are also excessively contaminated.
