Bacillus weihenstephanensis is a psychrotolerant species within the Bacillus cereus group. It differs from other psychrotolerant members of the Bacillus cereus group in terms of the DNA sequence of the cold-shock protein cspA . The name comes from the district Weihenstephan , where the bacterium was first isolated. Characteristics of B. weihenstephanensis can be found in numerous Bacillus cereus and Bacillus mycoides strains. Later genomic studies classified B. weihenstephanensis as a heterotypic synonym of Bacillus mycoides .

The species Bacillus weihenstephanensis can be distinguished from the closely related species Bacillus cereus by the growth temperatures. The growth of Bacillus weihenstephanensis takes place at 4 ° C, but no longer at 43 ° C. Bacillus cereus only grows from 10 ° C, but also grows at 43 ° C. The species Bacillus weihenstephanensis can thus be described as psychrotolerant ("cold-accepting"), while Bacillus cereus is mesophilic ("loving moderate temperatures").

The original isolates were obtained from pasteurized milk from southern Germany that was subjected to a storage test at refrigerator temperatures. The occurrence strongly depends on the annual mean temperature . Psychrophilic B. Weihenstephanensis occur in alpine and temperate zones, but not in the tropics. Due to its ability to cause food poisoning , it is classified in biological risk group 2. Thus emetic were Bacillus weihenstephanensis characterized, the cereulide prepared at 8 ° C. However, this is an exception. As a rule, strains of Bacillus weihenstephanensis produce the typical Bacillus cereus enterotoxins Nhe , Hbl or CytK.
