Calcium tartrate (also calcium tartrate ) is a chemical compound from the group of tartrates , more precisely the calcium salt of tartaric acid , usually L -tartaric acid.

Occurrence

Calcium tartrate occurs naturally as an ingredient in many fruits and is one of the main components of tartar that settles in wine barrels .

Extraction and presentation

Calcium tartrate can be obtained by reacting potassium hydrogen tartrate with calcium oxide .

The reaction of potassium tartrate with calcium chloride or calcium hydroxide is also possible .

Calcium tartrate is a colorless solid that is hardly soluble in water. The tetrahydrate has an orthorhombic crystal structure.

use

Calcium tartrate is used in the food industry as a raising agent , complexing agent , acidulant and acid regulator . It is generally approved in the EU as a food additive with the number E 354 without maximum quantity restriction ( quantum satis ) for all foods.
