The parsnips ( Pastinaca ) form a genus of plants in the umbelliferae family ( Apiaceae ) with 14 species. It is common in Europe and in western Asia. The most important commercially used and at the same time the only species occurring in Central Europe is the parsnip ( Pastinaca sativa ), also known as the parsnip.
description
The Pastinaca species are biennial herbaceous plants with a long, conical main root that is beet-shaped and thickened in the case of cultivated ribs. The stem is ribbed and hollow. The leaves are usually pinnate and bare. The leaflets are sessile and serrate or pinnate.
Many flowers are grouped together in terminal and lateral, ascending multi-rayed dold-like inflorescences . Sheaths (involucre) and sheaths (involucellum) are missing. The calyx teeth are tiny and triangular. The petals are egg-shaped, yellow and curved inwards at the tip. As with all umbelliferae, the fruit disintegrates into two partial fruits when ripe.

- Pastinaca argyrophylla Delip. : The homeland is Bulgaria .
- Pastinaca armena fish. & CAMey. : It is common in Turkey and the Caucasus region.
- Pastinaca aurantiaca (Albov) Kolak. : It occurs in Georgia.
- Pastinaca gelendostensis (Yild. & B.Selvi) Hand : The home is Turkey.
- Pastinaca glandulosa Boiss. & Hausskn. : The home is Turkey.
- Pastinaca hirsuta Pančić : It occurs in Bulgaria, Serbia and Macedonia.
- Pastinaca kochii Duby : With two subspecies:
- Pastinaca lucida L .: It occurs only in Mallorca and Menorca .
- Pastinaca pimpinellifolia Griseb. : It is common in the Caucasus region, Turkey and Iran.

- Pastinaca yildizii Dirmenci : The homeland is the province of Balikesir in Turkey.
- Pastinaca zozimoides Fenzl : The home is Turkey.
