The most important works by Hubert Elsässer can be found in the area of architecture-related, public sculptures, fountains and church chancel designs. With commissioned work in many churches all over Germany, Hubert Elsässer is one of the most important sculptors of his time in this field.

The most important works here in Limburg Cathedral include the altar island, a wrought-iron grille, the cathedra ; in the St. Hedwig's Cathedral in Berlin the grave slab for Provost Bernhard Lichtenberg ; in Fritzlar Cathedral the Way of the Cross and in Würzburg Cathedral the apse design , the Marian column, the memorial portrait of Cardinal Döpfner and the fountain in the cloister. In the public area, the Würtzburg column in the congress center and in Munich the fountain in Schützenstraße and the Faun meeting point at the Studentenwerk on Leopoldstraße should be mentioned.

The figuration of the works is developed from plant forms (especially trees) and also from landscapes. The sculptures seem to have grown out of nature spontaneously. The recurring slice is characteristic, like a fruit on a stem-like base.

In his home community of Gröbenzell, the four-element fountain in front of the Catholic St. Johann Baptist Church and the approximately 1.60 meter high Knospe stele in the foyer of the community center are reminiscent of the artist.

In his last years Hubert Elsässer devoted himself more and more to the representation of the human figure, be it as portraits (e.g. four Nobel Prize winners for the Max Planck Society ) or as free, abstract full-body figures made of limewood.
