Perger received his training from the sculptor Anton Ferner in Passeier and in Augsburg . He then lived in Tyrol and Salzburg, in 1760 he was accepted into the Academy of Fine Arts Vienna  . After that he was back in Tyrol as a sculptor, mainly in wood, and created numerous statues for churches, especially in the Wipptal and its side valleys. He died in 1774 while working on furnishing the parish church in Toblach. Perger's works are influenced on the one hand by the South German rococo-plastic style , on the other hand by the classicism of the Vienna Academy.

In Toblach the Johann-Perger-Straße was named after him.
