Nougat cream is a sweet spread made from finely chopped hazelnuts or almonds , cocoa products , sugar and vegetable fat . In terms of its composition, it largely corresponds to that of nougat , the only difference being that it contains added vegetable fat, making it easier to spread. Depending on the oil seeds used, the names nut nougat cream or almond nougat cream are common.

There is a multitude of products, some of which differ greatly in terms of nut, cocoa and sugar content. According to the guiding principles for oil seeds and the masses and confectionery made from them in the German Foodstuffs Book, nougat cream contains a maximum of 67% sugar and at least 10% skinned hazelnuts or blanched or peeled almonds or debittered bitter almonds , which are not permitted with nougat . The addition of small amounts of lecithin , flavorings , milk and whey powder and soy flour is permitted. However, high-quality creams with considerably higher nut contents of over 40% are available on the food market.
