During his time as a player, Zapel played for many clubs in northern Germany, including SC Concordia Hamburg . On July 1, 2002, he acted as a player-coach at Harburger TB and left the club at the end of the season. After two years without a club, he was signed on July 1, 2005 as a player-coach at FC St. Georg-Horn . On June 30, 2006, Zapel left the club. For the new season, TuS Hamburg hired him as a player-coach. After a season he and TuS Hamburg went their separate ways.
After Zapel had not taken on any tasks in football for two years, he was hired as head coach by Rahlstedter SC. During the season, the collaboration was ended on March 23, 2010. On July 1, 2010 he was coach of Barsbütteler SV , then from 2012 to 2016 coach of SV Eichede . For the 2016/17 season , Zapel took over the third division team of SG Sonnenhof Großaspach as the successor to Rüdiger Rehm . The contract, which ran until 2018, was terminated on May 23, 2017.
On November 13, 2017, Zapel took over Werder Bremen's second team from the third division from Florian Kohfeldt , who had taken over as coach of the first team. On February 5, 2018, the collaboration was ended after a total of three draws and five defeats.
From April to June 2019, Zapel was the coach of SC Fortuna Köln , with whom he should enable third division relegation on the last four match days of the 2018/19 season, which however no longer succeeded.
For the 2019/20 season , Zapel returned to SG Sonnenhof Großaspach , where he received a contract valid until June 30, 2020. On December 16, 2019, he was dismissed after the first half of the season after a 2-1 home defeat against bottom of the table, FC Carl Zeiss Jena . Großaspach was at that time with 16 points from 19 games on the penultimate place in the table.
