Duration of training and structure

The training period to become a confectionary technologist is three years. The training takes place at the training company and vocational school . Reasons for the reorganization

The basic training regulations for the previous occupation date from 1980. New developments, such as the increasing importance of food safety and quality assurance, were no longer adequately reflected in the existing content. The previous disciplines led to a differentiation of the training content - formally only in the third year of training, but in operational practice the trainee was confronted from the first day with those sweets that were produced in his training company. Now there is a broad, uniform qualification. The examination requirements were also redefined on the occasion. You are now process oriented; an extended final examination is planned.

Training allowance

The amount of the training remuneration is usually based on the collective bargaining agreement. In 2015, the Federal Employment Agency was aware of these ranges for the following training allowances:

  • 1st year of training: 403 to 739 euros
  • 2nd year of training: 484 to 829 euros
  • 3rd year of training: 555 to 944 euros.

There is only one vocational school in Germany for this apprenticeship, the Central Technical College of the German Confectionery Industry (ZDS) in Solingen , North Rhine-Westphalia . Twelve weeks of lessons are planned for each of the three years of training. The twelve weeks are divided into three four-week training blocks. In these lesson blocks, the trainees have all-day lessons and internships. During their stay in Solingen they live in the boarding school of the technical school.
