Stefan Wiesner (born October 16, 1961 in Escholzmatt , Canton Lucerne ) is a Swiss chef .

Wiesner is also known as The Witcher from Entlebuch through numerous television programs on SF DRS , 3sat and ZDF as well as the documentary of the same name by Eric Bergkraut .

Life

After an apprenticeship as a chef, Stefan Wiesner worked in various restaurants , including Roman Stübiger at Le Manoir in Lucerne . In 1984 he returned to Escholzmatt and in 1989, together with his wife Monika Auretto, took over their parents' inn Rössli .

Wiesner became famous for dishes such as soup made from smoked snow, the “hay soup”, with its numerous sausage creations such as the farmer's bratwurst with gold or mustard with charcoal . As a gastrosoph , he poetically integrates the nature of the Napfberg region with its traditions such as agriculture , Napfgold or charcoal burning into the culinary art . He proves his knowledge of aromas with perfume dishes, among other things . What is also impressive about Wiesner is his approach to the development processes in the Rössli. Together with his wife and the team of kitchen and service staff as well as suppliers, a culinary and gastronomic whole is created. He is considered an experimental cook specializing in, as described in his latest book, avant-garde natural cuisine. Although not as highly decorated as other of his professional colleagues, he is considered one of the most creative chefs in Switzerland.
