Bäckerei Hinkel is a Düsseldorf bakery founded in 1891 . The family business, mentioned several times in the media and in travel guides as a traditional or cult bakery, specializes in the production of German bread as well as various types of pies, cakes and rolls.

history

Jean Hinkel and his wife Katharina, née Dresisa, founded the Hinkel bakery in Düsseldorf in 1891. Jean Hinkel originally came from the Ahr. He has been awarded gold medals for his pastries since 1895. The first bakery was on Grünstraße near Königsallee . Due to the expansion of his family, they moved their business to the Bilk district . Jean Hinkel also took part in the industrial and commercial exhibition in Düsseldorf in 1902 .

Afterwards his son Johannes Hinkel ran the bakery and moved with her to Burgplatz 9-10 in the old town. During the Second World War, the business moved to Mittelstrasse 25 , where he set up an emergency bakery to feed the population.

In 1956, Karl Josef Hinkel (1932–2002) took over the business and opened his “Bread Friends' Bakery” there. In addition to the idea of ​​a water mixer for night bakers, he also designed the chick with a pretzel in its beak, which is still a trademark of the Josef Hinkel bakery today. In the early 1990s, the "Bread Friends' Bakery" was included in international travel guides.

Karl Josef Hinkel's son Josef Hinkel (* 1959), the great-grandson of the founder and headmaster of the Düsseldorf Bakers' Guild, has been running the Hinkel bakery with two shops in downtown Düsseldorf since 1988 - the second shop is at 31 Hohe Straße . His brothers Raymund (* 1956) and Jürgen Hinkel also work in the family business as master bakers.

Josef Hinkel helped out in the company's bakery as a child. In addition to his training as a baker, he also completed an apprenticeship in business administration. He spent his journeyman years in Kiel, Garmisch and Aachen, and passed his master craftsman examination in Hanover. He fundamentally rebuilt the company and received several awards. Bernd Kütscher , director of the Akademie Deutsches Bäckerhandwerk Weinheim , described Josef Hinkels' business concept as a blueprint for success. Since taking over the business, he has quintupled the bakery's sales. In 2014 the bakery Josef Hinkel took part in the ZDF game show Germany's best bakers . In 2015, Hinkel published the baking book Das große Hinkel-Brotbackbuch in Droste Verlag .

The Hinkel bread bakery does not offer confectionery, but rather specializes in the bread bakery business. Around 70 types of bread are on offer, all handmade. The company employs around 100 people, around 30 of whom are bakers. The family business still offers Printen today according to the recipe handed down by founder Jean Hinkel.

The store opened by Johannes Hinkel at 9 Burgplatz and two other branches in Düsseldorf, one at Glockenstrasse 31 and one at Am Wehrhahn 42 , were run by Michael Hinkel, a cousin of the brothers Raymund, Josef and Jürgen Hinkel, and his wife Petra Hinkel for 22 years guided.

Like Josef Hinkel's bakery, his business has also been selected several times in the best list of the gastronomic guide Der Feinschmecker . When the magazine named the best bakers in the federal states for the first time in 2004, he was voted the best baker in North Rhine-Westphalia. All three existing branches of Michael Hinkel were closed at the end of 2018. The reasons given were a decline in sales and the poor health of the owner.
