After his doctorate in 1882 and his habilitation in 1886 - the title of his habilitation thesis is "Bacteriological Studies in Typhus Etiology" - he became a private lecturer in paediatrics at the University of Munich, in 1896 an associate professor and in 1902 a civil servant.

From 1890 until his retirement in 1928, Seitz headed the children's outpatient clinic at the Reisingerianum in Munich, having previously been its deputy head.

In 1901 he was one of the signatories of Georg Hirth's appeal to found a " Child Protection Association " and was its chairman from 1902 to 1921. From 1903 he was also on the board of the “ Infant Home Munich ” association.

Seitz was also chief medical officer of the Landwehr, 1924-1925 first chairman of the state association for maternity, infant and small child care in Bavaria and privy councilor.
