Dietschy was born in Pfaffenberg , a village in the Schönau lordship that belongs to Upper Austria (today a district of the town of Zell im Wiesental ). He came from simple smallholder backgrounds and had little elementary school education. Around 1791 he moved to Rheinfelden , where he initially worked as a pig dealer. On January 5, 1792, he received the citizenship of Rheinfelden, for which he had to pay 125 guilders and several contributions in kind. In 1799 he bought the inn "for Salmen" together dazugehörendem brewing rights . Dietschy not only brewed for the own needs of the affiliated inn, but was also keen on market expansion and soon also brewed for other hosts in the area. Over time, the sales area extended to Aarau , Basel , Liestal and Schopfheim .

Dietschy put his profits into the expansion of the company and the acquisition of real estate. In 1806, the Rheinfelder Johanniterkommende , which had existed for almost six centuries, was dissolved. Seven years later he auctioned the entire property and thereby rose to become the largest landowner in the Fricktal . Gradually, he moved production to a site west of the old town, but continued to operate the inn as such. From 1814 Dietschy was a member of the municipal council , from 1826 to 1838 he was the mayor of the city . In this function he was particularly committed to the expansion of the school system. In 1816 he was elected to the Grand Council , to which he belonged until his death. Dietschy represented moderately liberal views. He stood up for the interests of the Fricktal, also for the improvement of the economic basis and for tolerance in questions of church politics. In 1831 he was a member of the Constitutional Council, which drafted a new cantonal constitution.
