The son of a businessman passed the Abitur in Leipzig and studied the first three semesters at the University of Freiburg im Breisgau (1930/31). There he completed his habilitation in 1949 with a thesis on the Wettin corporate state from the beginning of the 12th century to the partition of 1485. In 1949/50 he went to the Free University of Berlin . In Berlin he turned more and more to economic and social history in general and the history of the city in particular. In 1958 he became an associate professor in Berlin and in 1962 he was given the chair for medieval history (economic and social history). He turned down a call to the University of Frankfurt . In 1975 he retired.

Helbig had close ties to Japanese history. In 1963 he made his first trip to Japan. Through Helbig's mediation, there was a guest lecturer position from 1965 to 1986, which was filled by a German-speaking Japanese university colleague at the Berlin Friedrich Meinecke Institute, alternating between one and two years . In 1973, Helbig took over the chairmanship of the Association for the Promotion of the Central Agency for Germans for Personal and Family History and the Foundation Central Agency for German Personal and Family History in Berlin, succeeding Herbert Spruth .
