Kolby began his motorsport career in karting in 1988 , where he was active until 1994. In 1995 the Dane switched to the British Formula Ford . After finishing tenth overall in his first season, he won the British Formula Ford Championship in 1996.

After finishing sixth in the British Formula Renault championship in 1997 , he moved to Fortec Motorsport in the British Formula 3 championship in 1998 and finished sixth overall. In 1999 he managed to win a race in British Formula 3 and finished fourth in the championship. He also started for Coloni Motorsport in a race in the Italian Formula 3000 . He was 15th overall.

In 2000 Kolby switched to the international Formula 3000 championship and competed for the French DAMS team. He could not qualify for four races and was inferior to his teammate Franck Montagny over long distances. He finished the season in 23rd place overall. In 2001 Kolby left Europe and started in the North American Indy Lights for Conquest Racing . At the race in Kansas City he won by just a thousandth of a second over Damien Faulkner . The finish was one of the tightest decisions in a motorsport race. The Dane, who was dismissed after eight races, finished eighth overall at the end of the season.

Before he had to end his career at a young age in 2003 due to financial problems of his sponsors, he returned to Formula 3000 for three races in 2002 . Kolby started for the Italian team European Minardi F3000 supervised by Coloni . He never got past tenth place and was still the second best Minardi driver at the end of the season in 19th place in the drivers' standings.
