As lasagna [ lazanjə ] or [ lasanjə ] (plural lasagne ) both are exceptionally wide noodles and the multiple layers of dough (pasta plates)-containing casserole called.

etymology

In ancient times, the Romans used a technique common in the Mediterranean to make flat sheets of pastry, which were then processed into strips and cooked. These leaves were called lagana , from which today's lasagna can be traced back.

Another possibility is the derivation from ancient Greek τὰ λάσανα tà lásana , which means a grate for pots or frying pans . This word was adopted by the Romans as lasanum , meaning "cooking pot". The Italians used the word to refer to the vessel used to prepare what is known as lasagna - this is how the word lasagna refers to the dish itself.

Lasagna is a very broad type of ribbon noodle that is prepared in a similar way to cannelloni . A dish made from wide ribbon noodles, which are cooked tossed in butter and served à part with grated Parmesan and minced meat sauce, is called lasagne alla bolognese in the kitchen language .

According to a less widespread theory, the dish is said to have an English origin: In the Forme of Cury , a recipe collection of the cooks at the court of King Richard II of England from the 14th century, the dish is "loseyns" (pronounced "lasan") described, which also includes layered pasta plates baked with cheese.

Lasagna pasticciate and lasagne alla casalinga

Lasagne pasticciate or lasagne alla casalinga , or pasticcio for short , comes from Bologna and is better known in Germany as lasagne al forno . The dish consists of several alternating layers of pasta plates, ragù alla bolognese , bechamel sauce and grated parmesan and is baked in the oven.

Vincisgrassi

This specialty from the Marche is named after the Austrian Field Marshal Alfred I. zu Windisch-Graetz - Vincisgrassi is a corruption of this name. It is a casserole that consists of several alternating layers of pasta plates, a sauce made from veal , veal brain and / or sweetbreads , veal liver or alternatively poultry liver , wine and tomato , a bechamel sauce and grated Parmesan . The specialty of this preparation lies on the one hand in the pasta dough made with dessert wine , on the other hand in the meat sauce seasoned with a little cinnamon .
