Lerche laid the foundations for the creation of scientifically operated food hygiene in Germany and is considered a decisive pioneer in the development of the DLG meat product tests.

Life

Martin Lerche was one of four children of master bricklayer Friedrich Ludwig Lerche and his wife Ottilie Lerche geb. Elbert. Martin Lerche studied veterinary medicine in Berlin and Hanover and received his doctorate in 1920 at the University of Veterinary Medicine in Hanover . Lerche completed his habilitation in 1930 in Breslau on the subject of "Abortus Bang bacteria in milk and milk products" . In 1933 he was appointed professor of food science and meat inspection by the Berlin Veterinary University . In 1951 he played a leading role in the rebuilding of his institute at the Faculty of Veterinary Medicine at the Free University of Berlin and was a founding member of the German Society for Veterinary Medicine .

During his student days, Lerche had become a member of the Obotitria fraternity in Berlin , which was originally based at the Military Veterinary Academy in the German Empire and had many veterinarians and hygienists in its ranks. Later he became the old man of the Obotritia.

The focus of Lerche's scientific work was the contagious bacterial and parasitic diseases of animals for slaughter , poultry and wild animals . Other topics of his work were the hygiene of meat production and processing, preservation methods, additives and fundamental research into the knowledge of the human intestinal flora . During his active time as a professor at the Free University, Lerche published several standard works such as the textbook on veterinary food monitoring or the textbook on veterinary milk monitoring as well as a commentary on the meat inspection law.

From Martin Lerche's marriage to Margarete Lerche geb. Berenz had two children. His son Dietrich Lerche was later also a professor at the Free University of Berlin, but in the field of human medicine .
