Octyl gallate has a slightly bitter taste and is used in the food industry due to its antioxidant effect.
Studies report fungicidal activity against Saccharomyces cerevisiae and Zygosaccharomyces bailii and antibacterial activity against Staphylococcus aureus .
The maximum amount in food is 100 to 200 mg / kg based on the fat content of food.
