Savagnin
The Savagnin , also known as Savagnin blanc , is a white wine variety that is cultivated almost exclusively in the Jura . The ethanol-heavy , full white wine is usually golden yellow, the taste is reminiscent of nuts , vanilla and honey, sometimes with a slightly smoky appearance. The famous ampelographer Pierre Galet suspected that Savagnin was identical to the Traminer, which was previously widespread in Germany, Alsace , Austria and Hungary , or a variant of it, which has since been proven molecular-biological. In Austria the Traminer is still known for its distinctive aroma and its longevity. This also applies to the Savagnin: You can safely store it in the cellar for up to 30 years.
The yields are quite low. As a rule, the Savagnin is only used for the Vin Jaune des Jura, the high final price of the wine also justifies the cultivation of a difficult grape variety. It is also used in the sparkling wines of the Crémant du Jura appellation . In France, a vineyard area of 472 hectares was collected.
Under the name Gringet , the grape forms part of the sparkling wine from Ayse ( Savoie ) and is permitted within the Vin de Savoie appellation . In Switzerland it is grown as Heida in particularly high locations in the Valais , especially on one of the highest vineyards in Europe near the mountain village of Visperterminen . The vineyard area in Switzerland is 78 hectares (as of 2007). In Hungary the variety is called Fromentin.
In 1998, the world population was less than 1,000 hectares .
The wine marketed in Alsace under the name Klevener de Heiligenstein is a product of the Savagnin Rose grape variety , probably a mutation of Savagnin.
Ampelographic varietal characteristics
- The shoot tip is open. She is hairy white wool. The tip of the shoot is colored white-green with a carmine-red tinge. The young leaves are lightly hairy and yellowish in color.
- The small leaves are usually whole (but rarely five-lobed and deeply indented). The stalk bay is lyre-shaped and only slightly open. The blade is bluntly serrated. The teeth are medium in size compared to other varieties.
- The cylindrical grape is small and dense. The round berries are small and whitish in color. The taste of the berries is neutral. The berry bowl is thick-walled.
The moderately vigorous grape variety ripens about 20 days after the Gutedel , it is therefore considered to ripen late. The yields are usually low, so that targeted vine training can increase the yield. Because of the thick berry skin, the variety is hardly susceptible to raw rot, so it can remain on the vine until December. The variety is susceptible to powdery mildew .

The 'Savagnin' is neither identical nor related to the Sauvignon Blanc .
