Smørrebrød ( Danish smør  'butter' and Danish brød 'bread'), German also Smörrebröd, is a richly sandwiched sandwich and a traditional lunch in Danish cuisine . The basis is a slice of bread , often rye bread , there are no limits to the combination of toppings. However, there are some classic recipes.

The smørrebrød is consumed with a knife and fork. A slice of bread that is less lavishly topped and eaten out of hand is called “håndmad”; a double slice of rye and white bread is called amagermad .

Thinly cut slices of bread are thinly coated with salted butter. Food fish , but also crabs or caviar , cheese, sausage, pate or meat are used as toppings . It is garnished with boiled or fried eggs, raw egg yolks , fresh, boiled or canned vegetables, lettuce, fruit, kitchen herbs and various sauces such as mayonnaise or tartar sauce .

The Smørrebrød with warm or cold liver pate is served with fried bacon or with pickled cucumber .

The classics include Sol over Gudhjem (German: "Sun over Gudhjem "), with smoked herring , onions and / or chives and chopped radishes as well as raw egg yolks, Pariserbøf (German: "Parisian Tatar") with tartare , onions, red Pray and a fried egg , Stjerneskud (German: “Shooting Star”) with breaded plaice , shrimp, asparagus and caviar or Dyrlægens natmad (German: “Veterinarian's supper”).

In Denmark, smørrebrød is offered at lunchtime in own shops or upscale butcher shops , where they are sold piece by piece and transported in cardboard boxes. Smørrebrød with cold ingredients are usually prepared in advance and offered for sale in showcases .

Ida Davidsen's Smørrebrøds restaurant in Copenhagen became famous for its extensive order forms with 178 different options. The 140 cm long note with all versions that can be ordered was included in the Guinness Book of Records .

The Danish Smørrebrødsjomfru (literally "Butterbrot- Jungfer ") corresponds to the German Kaltmamsell as a job title for an employee who is responsible for cold dishes and buffets.

In literature and music

One of the humorous improvisations by the Norwegian-Danish poet Johan Herman Wessel (1742–1785) has today the status of a classic:

"At Smørrebrød er ikke Mad,
Og Kierlighed er ikke Had,
Det er for Tiden hvad jeg veed
Om Smørrebrød og Kierlighed."

"That Smörrebröd is not food
and love is never hate -
so far that is all
I know about Smörrebröd and love."

The Danish vocal quartet Four Jacks (including Otto Brandenburg ) published a cover version of the Harry Belafonte song Island in the Sun under the title Smørbrød Calypso in 1957 .

Trivia

The term Smörrebröd was also popularized in the German-speaking world by the master chef of the Muppet Show . In the original version a Swede ( Swedish Chef ), the now Danish chef always happily recites his jingle : “Smörebröd, Smörebröd, römm, pömm, pömm, pomm” (or “Smørrebrød, smørrebrød, røm pøm pøm pøm”; in English Original: "Bork bork bork bork").

Smørrebrød found its way into the German language in the 1960s and 1970s.
