Thomas Kammeier (born September 27, 1966 in Schermbeck , North Rhine-Westphalia ) is a German cook and cookbook author.

Life

After finishing school, Thomas Kammeier decided to train as a baker and graduated in 1986. But since he found the bakery trade too boring, he decided to train as a cook . He completed this at Landhaus Scherrer , Recklinghausen . After three years of training, he started his career in the Rotisserrie Dubs in Worms . Other positions included the Landhaus Scherrer in Hamburg (1993–1995), the lobster parlor in Düsseldorf (1995–1996) and initially the restaurant Zum Hugenotten in the Hotel InterContinental in Berlin. After being sous chef there for a year , he rose to head chef in 1998 . In March 2003, the restaurant within the hotel changed its location and name and became HUGOS. Since June 2015 he has been the gastronomic director of the EUREF - Campus . There he is responsible for five restaurants

Kammeier is married, the couple has one child.

Cooking philosophy

“Many colleagues meticulously write down everything that they have ever cooked and I myself have a recipe file of individual recipes - but in the end I don't keep anything, and I do that consciously because you are constantly challenged to do something new, yourself to develop further. You can't just quickly look it up on the computer or in notebooks. For me this is a good way to constantly develop myself further, to build up pressure on myself personally. You have to constantly look for new products, for good products, and it is also the basis of my kitchen that we try to use good products and then work them out in such a way that you can actually taste the suckling pig belly in the dish . "

Awards

The Michelin Guide awards Hugos under Kammeier's direction with one star, Gault Millau awards 3 toques (17/20 points). From Schlemmeratlas is Hugos 4 spoons rated, The Great Restaurant & Hotel Guide gives 4 Awards, the magazine Der Feinschmecker awarded 3 out of 5 F's and the restaurant rated 2003 as "Restaurant of the Year" and "Trend Restaurant of the Year" as well as 2007 and 2008 as “Best Ambience Restaurant of the Year”. The Varta guide gives the restaurant 3 out of 5 possible diamonds. Kammeier has also won the Berlin Master Chef competition several times , which has been organized by Berlin Partner GmbH since 1997 and which honors the best chefs in the Berlin-Brandenburg capital region every year.
