“Kredenz-Scene”: artistically exaggerated representation of a historical beer tasting at the Nockherberg in Munich (on April 2nd between 1778 and 1795). Paulaner master brewer Frater Barnabas gives Elector Karl Theodor a mug of Salvator strong beer. The inscription at the bottom of the picture reads: "Salve pater patriae" (lat. "Greetings, father of the fatherland").

Valentin Stephan Still ( baptized February 15, 1750 in Fischbach , today Nittenau , † 1795 in Au , today Munich ) was the Paulaner brewer in Munich.

Life

Valentin Stephan Still, also known as Brother Barnabas, was born as the son of the brewer Georg Still in Fischbach near Nittenau in the Upper Palatinate. At the age of 23 he entered the Amberg monastery of the Paulaner Order as a lay brother . One year later, in 1774, Brother Barnabas was appointed master brewer of the Neudeck monastery . The monastery was at the foot of the Nockherberg in Au near Munich, which at that time had 1,500 inhabitants . The monastery was initially only allowed to brew beer for private use, for its own “home necessity”, in order to supplement the meager diet of the monks. The monastery received a serving permit in the time of the master brewer Barnabas on February 26th, 1780 by the Elector Karl Theodor , who regularly moved to Neudeck with his entire court on April 2nd to open the serving of the "Heilig-Vaterbier", later called Salvator and there was served the first measure from Brother Barnabas. The reputation of the brother Barnabas was great. From a disclosure of the Privy Council dated February 10, 1781, which the Elector Karl Theodor personally signed, it emerges that Brother Barnabas should "if there are no other major concerns, the brewery should be transferred again".

In the same year, an electoral commission certified the brother that he was “an intelligent, hardworking and loyal master of brewing”. Under his leadership, the monastery brewery grew into a large brewery, which in 1793/94 reached four times that of the average brewery with an annual beer output of 3,200  hectoliters . He not only had friends among his confreres in the monastery, which is why he returned to Amberg in 1788, but he was soon brought back to Munich. Brother Barnabas died in 1795 of a stomach ailment. Until his death he was the leading brewmaster for the order.

In Fischbach, a memorial plaque donated by the Paulaner brewery in 1985 commemorates the brewer. In 2005 a village fountain, donated by the Paulaner brewery and the city of Nittenau , was built in his honor in his birthplace, Fischbach .

Bibas, princeps optime! “(Greetings, Father of the Fatherland! Drink, best Prince!) The first measure of Salvator.
