History of the forest castle and the technical school

The oldest part of the academy building facing the street was built in 1906 and 1907 and initially operated as a hotel and restaurant "Waldschlösschen". Due to an initiative of the Baden Prime Minister Walter Köhler and the Baden district baker's guild master Heinrich Pfliegensdörfer - both from Weinheim - the city of Weinheim acquired the so-called “Waldschloss” on July 21, 1937. For a symbolic purchase price, it transferred it to the Reichsbäckerverband in Berlin as a "measure of economic development", which in return undertook to build and operate a bakery school.

On December 8, 1938, the opening ceremony of the "Bakery School for Southwest Germany" for the areas of Baden , Württemberg , Saar-Palatinate and southern Hesse by Prime Minister Walter Köhler and Reich Guild Master Karl Grüßer. "The German bakery trade has the task of delivering healthy bread to the people," said Reich Guild Master Grüßer, who had come from Berlin for the opening. For this to happen, "survival must be pursued from below" and trained. “The bakers are a crucial link in the German economy. This handicraft provides food for the people and thus public health, ”declared Prime Minister Walter Köhler in his speech.

Between 1944 and 1948 there was a war-related break in school. The building was used as a hospital. From 1946 to 1949 the Central Association of the German Bakery Trade had its seat in the Weinheimer Waldschloss (today in Berlin).

In 1948 it reopened as the "Bäckerschule Weinheim", sponsored by the Baden Bakers' Association. In 1960 the name was changed to “Fachschule Weinheim des Deutschen Bäckerhandwerk”, then in 1969 it was renamed “Bundesfachschule des Deutschen Bäckerhandwerk” (Federal Technical School of German Bakers), which was used for many years and is still widely known today.

In 1991 there was an extensive expansion by adding a technology center with a teaching bakery and laboratory to the guest house, which was built in 1955 .

With the establishment of the ADB-Verbund, which is coordinated by the Academy in Weinheim, the renaming of the “Federal Technical School of the German Bakery Trade” to “Academy of German Bakery Trade Weinheim” took place in 2006. Common names are also "Bundesakademie Weinheim" or simply "Akademie Weinheim".

Due to the significant increase in the number of academy participants since 2006, public business operations in the previously leased hotel-restaurant “Waldschloss” were discontinued in 2008. Since then, the academy's restaurant and guest house, which is still in operation, has only been open to participants in master classes and seminars .

In the years 2009-2010 a general renovation took place in the old building including restaurant, reception area, seminar wing, administration rooms and stairwells. The restaurant was expanded to include a training area for front baking and bakery catering. The inauguration of the new premises took place on March 31, 2010 by the Baden-Württemberg Prime Minister Stefan Mappus .
