Calcium acetate (E 263) is a chemical compound with the chemical formula Ca (CH 3 COO) 2 . It is a calcium - salt of acetic acid .

Calcium acetate is a white solid with a slight odor of acetic acid and a strongly bitter taste. In the delivery form, calcium acetate contains varying amounts of crystal water. Under normal conditions (room temperature, 65% air humidity) the compound is stable with about 2 mol of crystal water . At 60 ° C the compound dissolves in its own crystal water, which is equivalent to melting.
Calcium acetate is an intermediate product in the production of acetone ( 2 ) from calcium carbonate ( 1 ) and acetic acid with the so-called "lime salt distillation", because when heated u. a. breaks down in acetone:

Calcium acetate is used as an acid-regulating , preserving and firming food additive . It is approved in the EU as a food additive with the number E 263 without a maximum quantity restriction ( quantum satis ) for all foods approved for additives.
Calcium acetate is often used as an extractant for soil samples. It can also be used as a fuel paste in combination with denatured alcohol .
In addition, it is used in nephrology as a drug for the treatment of elevated phosphate levels in chronic kidney failure .
The heat pillows available in many places also contain a calcium or sodium acetate solution . The deformation of the metal plate creates a crystallization nucleus. After a few seconds, all of the acetate has crystallized, but gives off the heat of crystallization that has arisen over a longer period of time. The duration depends primarily on the size of the heat pad (ratio of volume to surface) and on the ambient temperature.
