Fäviken in September

Fäviken is a settlement in the municipality of Åre or the parish Kall of Sweden Krokom-Åre-Strömsund- church district , which the diocese of härnösand belongs. The group of houses includes around six buildings. The closest town is Järpen , 20 km away , Stockholm is around 520 km south.

Fäviken became famous in 2008 with the opening of the Fäviken Magasinet restaurant by the Swedish chef Magnus Nilsson . Today it is one of the 50 best restaurants in the world . The name of the district is often used synonymously with the top restaurant today.

history

The wooden building Fäviken Egindom from 1745, built as a farm, had already served as a restaurant before Nilsson's takeover under the owner Patrik Brummer. This is where “hunting parties with excellent elk fondue” met. The property includes around 20,000 acres of forest, arable land and meadows as well as a coastal strip of Lake Kallsjön .

The walls made of raw wooden boards are hung with plenty of elk skins , dried herbs and other decorations. All rooms are heated with open chimneys.

Thanks to the Fäviken Magasinet restaurant , the regional cuisine achieved international fame. Chef Magnus Nilsson created a cuisine that is based on local and seasonal ingredients, but only partially corresponds to Swedish cuisine . The short vegetation period of the northern latitudes of Jämtland only allows fresh products for about half a year. During the rest of the time, self-preserved foods and plants such as lichen , moss and tree bark are prepared. Food is dried, salted, jellied, cured and boiled down.
