Hessen à la carte

Hessen à la carte is a cooperation of the Hessian regional kitchen of the German Hotel and Gastronomy Association Hessen and the title of a series of the Hessischer Rundfunk . The certified restaurants and inns of the cooperation have been Germany's oldest regional quality community since 1990.

The aim of the catering association is to promote the reputation of Hessian cuisine, regional products, the importance of traditions, culinary diversity and original product quality in the catering sector and in public. Member companies and guests understand "Hessen à la carte" as a seal of quality for regional Hessian culinary art.

TV series "Hessen à la carte"

The oldest cooking show on German television is Hessen à la carte, which has been broadcast since 1981.

In addition to the restaurateurs, the faces of Hessen à la carte are still the TV presenter and filmmaker Michaele Scherenberg and her long-time co-presenter, the journalist, TV presenter and book author Karl-Heinz Stier . For the series "Hessen à la carte" of the Hessischer Rundfunk, the two presenters - who were often referred to as the "Hessen couple of the Hessischer Rundfunks" - traveled to all Hessian regions and reported on Hessian customs and recipes of the regional cuisine. The series will continue to be produced by the editors Michaele Scherenberg and Nina Thomas and broadcast by hr-fernsehen . TV chef Mirko Reeh also brought Hessen closer to a broad audience à la carte.

The restaurant cooperation was launched in 1990 by the managing directors Clauss Thiemeyer ( Hotel and Restaurant Association Hessen ) and Henrik Laschke (Hessen Touristik Service). The aim was to give the local cuisine more prominence in gastronomy. At the beginning of 1991, the cooperation consisted of 84 member companies that appeared under a common logo (lettering). In the first simple general directory of members, 118 member companies were listed. A first restaurant directory in book form with the title “Where it tastes good” was published in 1992, supplemented by recipes and pictures from the Hessen à la carte recipe books by Karl-Heinz Stier and Michaele Scherenberg, who hosted the television series of the same name on Hessischer Rundfunk. Marketing measures such as radio advertising, press releases, information material from the Hessian Tourist Association (Hessen Touristik Service) through to the first advertising material with a logo and public relations made the cooperation better known, supported by the eponymous television program "Hessen à la carte" on Hessian television. The cooperation was represented in 1991 with an information stand at the 15th Hessian Tourism Day, with a public discussion at the Hessentag and with a series of articles in the specialist magazine "Gastgewerbe". RTL plus broadcast a program about Hessen à la carte nationwide.

Hessen à la carte took part in the Menu & Logis '92 trade fair in Frankfurt in 1992 with a stand . When Hessen appeared at the International Tourism Exchange Berlin in 1994, Hessen participated à la carte, supported by the Licher private brewery as the main sponsor. In the same year Hessen à la carte played the parliamentary evening in the Hessian state parliament . Co-operation companies host 500 high-ranking guests from politics and business In 1994, the co-operation first started the cooking competition "Hessian regional cuisine - elimination for the kingfisher cup", in which the first three winners could win cash prizes and the winner the kingfisher cup. The competition went back to the idea generator and cooperation member Konrad Debelius (Zur Burgruine Frauenberg, Ebsdorfergrund). At that time the Kingfisher Cup was the only regional cooking competition at all. This competition took place annually until 2009 and became known beyond the borders of Hesse. The first official exchange of experiences also took place in 1994 in the member company Schloss Auerbach in Bensheim . To this day, this meeting takes place as an annual conference.

In 1995, the cooperation took part in the "Hessen turns 50" anniversary in the Wiesbaden-Biebrich palace gardens . At the summer festival of the Hessian State Representation in Bonn, member companies of Hessen a la carte entertained around 2000 guests in 1996 and in the same year gave a culinary guest performance in Bonn with Chancellery Minister Friedrich Bohl . Seven member companies took part in the presentation of Hessen à la carte at the Hessentag in Gelnhausen . A culinary home and hiking guide from Tengelmann with a print run of 50,000 copies listed 20 member companies in 1997. In addition, Hessen organized a specialty week à la carte in the casino of the Hessian Parliament in Wiesbaden . In 1997, Karl-Heinz Stier gave the impetus for the production of an apple wine and a naturally cloudy sparkling apple wine for Hessen à la carte, which is still produced today by Jörg Stier in the Stier press in Maintal .

Once again, cooperation companies feed around 2000 guests of the Hessian state government in Bonn at their 1998 summer party. In 1999, Hassia & Luisen started the “Better Eating in Hesse” campaign. 33 cooperation companies present themselves on the back labels on around 10 million fountain bottles from Bad Vilbeler Elisabethen Quelle. The campaign was accompanied by 300 radio spots from HR4 . The action was repeated between 2001 and 2004.

The restaurant directory was revised regularly until it developed into a real restaurant guide in 2000, in which the companies present themselves. At this point in time, 139 companies are members of the cooperation. Hessen à la carte participated in the Expo 2000 in Hanover and the opening of the Hessenwoche with the then Prime Minister Roland Koch . In the same year Hessen's first website went online à la carte.

A quality check (mystery check) was introduced for all members in 2001. The companies had agreed to have themselves checked for compliance with the criteria every two years. Starting in 2006, companies that met all the criteria received a certificate for the first time. Since 2007 the companies have been awarded a certificate signed by the Hessian Minister for Economic Affairs, Energy, Transport and Regional Development if they meet all criteria .

With the “Fit 2003” campaign, the cooperating companies were able to undergo a brief business check-up. Because of the great success, similar campaigns followed such as “Alles Klar 2004” and “Aufschwung 2005”. In 2004 and 2005, cooperating companies took part in the Green Week in Berlin. Six winners of the Eisvogel competitions competed against each other at the Hessentag in the HR tent in 2006 in a finger food competition with “hand to mouth” recipes and using regional products. In 2006, eight cooperation members formed the Hessen à la carte initiative group. They were the decision makers in innovations and improvements for the members. In September and October 2007, the Tegut company held tastings in its grocery stores under the motto “Good things from here: Hessen à la carte and tegut…. cook regional food ”.

Hessen à la carte members once again provided culinary catering for the parliamentary evening in the Hessian state parliament in 2006 and 2009, and each hosted over 600 high-ranking guests from politics and business. Together with personalities from politics, business and sport as well as the chefs from Hessen à la carte, DEHOGA Hessen got involved in Hessian schools with its new project “Cooking in School” from May 2010. For the “ Green Sauce Festival” in Frankfurt, Hessen donated the trophies à la carte 2010–2011 and 2012. The restaurant cooperation introduced a new Hessen à la carte logo in 2010.

The regional cookbook "Hessen à la carte - Enjoying home with all your senses" was launched in 2012. In cooperation with DEHOGA Hessen and Hessischer Rundfunk, the Frankfurt authors Barbara Goerlich & Ingrid Schick presented the hotels, restaurants and inns in Hessen as well as interesting reports and portraits of restaurateurs (palaces and castles, mills and monasteries, village bars and inns). and connoisseurs (producers and manufacturers of regional delicacies from Rhön caviar to Odenwald lardo). The shop went online, in which member companies and private individuals can order advertising material and restaurant guides. As part of the revision of the website www.hessen-alacarte.de, a smartphone app for Apple and Android was implemented in 2015 with the support of the Hessian Ministry of Economics . On June 30, 2015, the Hessen à la carte cooperation celebrated its 25th anniversary in the Hessian state parliament. The quality check was revised in 2016 and the 9th edition of the restaurant guide was published in spring. Hessen also entered into a cooperation with the “Echt Hessisch” action group à la carte.
