The son of a bookseller visited the Johanneum in Lüneburg. During his theology studies at the University of Helmstedt , he found a supporter of his musical talents in Duke Christian Ludwig (Braunschweig-Lüneburg) . After participating in the Collegium Musicum in Hamburg, he went to Berlin in 1662 , where he took over the position of cantor at the Church of St. Nikolai ; in this capacity he succeeded Johann Crüger . At the same time he worked as a teacher at the Gray Monastery high school . At this time Paul Gerhardt was working as a deacon at the Nikolaikirche.

In 1668 he went to Stettin , where the Swedish-Pomeranian Chancellor and curator Heinrich Coelestin von Sternbach had offered him a job. Here he was introduced on February 6, 1668 by the rector Andreas Gottfried Ammon as professor musices at the Carolinum grammar school there . At the same time, as a cantor, he led a choir at the Stettiner Marienkirche with which he had to perform regularly in the castle church . He complained several times about late or incomplete salary payments, which in 1676 did not materialize due to the Swedish-Brandenburg War .

Johann Georg Ebeling was married three times. His first wife, Maria Katharina Bolmeier, whom he married in Berlin, gave birth to five children. She died in February 1671. He married Sophia Elisabeth Pahl from Stettin in 1673, who died in January 1675 after having a daughter. On June 2, 1676, he married Sophia Kuetz, the daughter of the cantor of the Szczecin Council School. In November of the same year, both spouses fell ill. His wife died on December 2, 1676, Johann Georg Ebeling two days after her. Both were buried in the Marienkirche.

Ebeling is considered an important editor and composer of Paul Gerhardt's songs . In 1667 he published 120 songs by Gerhardt, most of which he provided with new melodies. He set 26 pieces to music for the first time. A few cantatas by him have also survived .
