The Wildbakers are a team of two master bakers, both from Baden-Württemberg . The Wildbakers team became German masters of the bakery trade in 2012 and has been a member of the national bakery team since then . You have published a baking book that went into its 9th edition in summer 2019 and is one of the best-selling books in its segment. The Wildbakers host showback events, baking seminars and a stage program. You have your own format on SWR television called Brotzeit mit den Wildbakers .

The Wildbakers

The Wildbakers team consists of two people:

  • Jörg Schmid, born in 1984, master baker and business economist , currently in the fourth generation as a master baker in his parents' company in Gomaringen .
  • Johannes Hirth, born 1985, master baker and business economist , currently in the fourth generation as a master baker in his parents' business in Bad Friedrichshall .

In 2008 they both attended the master baker's school at the Akademie Deutsches Bäckerhandwerk Weinheim , where they got to know each other and passed the master's examination together.

philosophy

The aim of the Wildbakers is to make the bakery trade , which in the eyes of the society, from their point of view, is a bit dusty back into what it is from their point of view: a diverse, innovative and modern trade that requires some skill and specialist knowledge. They see themselves as the "young wild ones" of the bakery trade. In order to live the philosophy, numerous activities are carried out, from media appearances to experience baking courses.

Winning the German championship

The Zentralverband des Deutschen Bäckerhandwerk e. V. organizes a championship every three years at the world's largest baker's trade fair, the International Bakery Exhibition (iba), for which teams of two master bakers can register and qualify as part of preliminary decisions for the final, which is held in open competition bakeries . At the iba 2009 in Düsseldorf , the “Wildbakers” team made the preliminary decision for the final. There the 4th place was achieved. First place went to two master bakers from Saxony . The Wildbakers competed again at the iba 2012 in Munich and made it to the final again. This time they reached the 1st place, thus the German championship.

Member of the national bakery team

The national bakery team of the Central Association of German Bakers' Crafts e. V. at the Akademie Deutsches Bäckerhandwerk Weinheim takes part in international baking competitions. In addition, she takes on representative tasks for the German bakery trade, for example at political events in Berlin. By winning the German championship in 2012, Wildbakers Jörg Schmid and Johannes Hirth qualified for the national bakery team and were accepted. You have been actively involved until autumn 2018 and are currently still involved in the alumni team at representative events.

Book authors

In September 2016, Gräfe und Unzer Verlag published a bread baking book for end consumers with the title "Wildbakers: Of Two Who Set Out To Bake Perfect Bread" ( ISBN 9783833855269 ), which is one of the best-selling books in this area and is currently one of the best-selling books there (Oct. 2019) is being sold in the 9th edition. In addition, the two Wildbakers contributed to the bread-baking book of the German national bakery team "BROT", which was also published by Graefe and Unzer (Teubner Edition, ISBN 9783833855375 ). Due to the enormous success of their first baking book, the Wildbakers published their second baking book at Gräfe und Unzer in August 2019, with the title "Wildbakers on Tour: On the way to the best bread" ( ISBN 3833868619 ).

Stage show

Since 2015 the Wildbakers can occasionally be seen at live stage shows, including a. at the Bundesgartenschau Heilbronn (September 2019) and in the Detmold town hall (October 2019).

Even before winning the German championship, the media became aware of the Wildbakers. The team created the “most expensive bread in the world” for the “Galileo” program. A "giant chocolate biscuit" was made as a world record attempt for ZDF .

Awards

In recognition of their successes, the Wildbakers were awarded the "GastroStern 2018" on the fringes of the Internorga Gastromesse, which is especially worth mentioning because this was previously exclusively to well-known gastronomy brands and star chefs such as Johann Lafer , Horst Lichter , Nelson Müller and Alfons Schuhbeck .
