Žilavka is an autochthonous white grape variety in Herzegovina , where it makes up about half of the total cultivation area of currently around 3,500 hectares.

Origin and history

Žilavka is most likely from the Mostar area . The name is possibly derived from "Žila" / "жила" ( Croatian / Bosnian / Serbian for "the vein"), since the veins of the berry are clearly visible through the thick but transparent skin during the ripening period. According to DNA studies carried out in 1999 , Žilavka is said to be related to the Teran Bijeli variety, which is mainly grown in Friuli and Istria . This is identical to the formerly called Prosecco , which has been called “ Glera ” since 2010 for legal reasons .

At the beginning of the Austro-Hungarian administration of Bosnia and Herzegovina (1878), Žilavka was the predominant white grape variety in terms of quantity and quality in viticulture in Bosnia and Herzegovina . Around 1900 Žilavka wines were described as "exceptionally mild, yet very strong - normal grapes and fully fermented wines contain alcohol contents of twelve and more percent" ; they had a "very fine flower that was faintly reminiscent of the muscatel wines".

In Yugoslavia , Žilavka was allegedly often only used as a blend wine .

properties

Žilavka is a variety of the noble grapevine (Vitis vinifera subsp. Vinifera). It has hermaphroditic flowers and is therefore self-fruiting. The late-ripening variety, described as fertile and vigorous, is susceptible to downy mildew , botrytis and spring frosts, but resistant to drought and can be grown on stony, shallow ground. The large, very compact grape weighs 150 to 200 grams at the time of harvest.

Žilavka is grown in the Croatian-populated West Herzegovina in the municipalities of Čitluk , Međugorje , Ljubuški and Čapljina , in the Serbian-populated East Herzegovina in the municipality Trebinje . There are also smaller cultivation areas in Croatia , Serbia , Macedonia and Montenegro .

Wines

Žilavka produces medium-heavy, yellow-greenish, high-alcohol (12 to 14%), acidic (5 to 6 g / l total acid) white wines with an extract of 20 to 27 g / l and aromas of nuts and apricots. Often 15% of the also autochthonous Herzegovinian white grape varieties Krkošija and Bena are added to the Žilavka wines from better locations . There is an aging potential in the bottle. Many Žilavka wines are fruity and uncomplicated, and a few are made in oak barrels.

Žilavka wines are recommended at 10 to 12 ° C with boiled or grilled lamb, eel and other freshwater or marine fish, as well as cheese and raw ham.

Synonyms are Mostarska, Mostarska Žilavka, Zhelavka Biella, Žilava Hercegovačka, Zilavka, Žilavka Bianca, Žilavka Bijela, Žilavka Blanche, Žilavka Hercegovačka, Žilavka Mostarska, Žilavka, Mostilavka, bin and Jilavisse, Žilavka Wearska Bijelailka, White, and Jilavisse. The synonym “Zilavka” must not lead to confusion with the Furmint variety , one of which is synonymous with “Zilavka”.

Literary

In Roda Roda's short story “Southern Night”, Private Heuberger from the Austro-Hungarian Infantry Regiment No. 4, high and German master, climbs a minaret in Mostar after enjoying “one and a half bottles of Schillawka” and sings a song, whereupon he speaks of an Austro-Hungarian court martial the next day sentenced to four years in prison for "religious disorder" . In the unfinished novel “Omer-Pascha Latas” by the Nobel Prize winner Ivo Andrić , the sixth chapter is called “A wine called Žilavka”. It is primarily about the outstanding quality of this wine, but actually about the loneliness of defected Polish, Hungarian and Austrian officers in the service of the Ottoman army in Bosnia-Herzegovina, who get drunk with Žilavka in order to forget their fate.
