The brewery was founded in 1811 as the Wohmann Brewery . In the same year, a Distelhäuser farmer was first mentioned as a beer brewer. In March 1876 Ernst Bauer , who came from Wertheim , acquired the “Zum Stern” inn in Distelhausen, including the brewing rights from the Wohmann brewery belonging to it. In the years that followed, Ernst Bauer began building a small, but soon flourishing home brewery. From 1905 Georg Bauer ran the brewery in the second generation. The owner's enthusiasm for technology meant that from 1906 the brewery was one of the first in Germany to use trucks to transport beer instead of the horse-drawn carts that were common at the time. In 1911 a new building with a brewhouse and an electric gristmill was built to keep up with technical progress. After Georg Bauer's sudden death, his brother, Fritz Bauer, took over the company in 1926. When Edmund Bauer, Georg Bauer's son, had finished his training, he joined the company management and held this post until he died in 1938. After Fritz Bauer ran the brewery for many years, Ernst Bauer took over the management of the company from his great-uncle in 1954 and was able to achieve major increases in productivity: the small local brewery increased its annual output to over 200,000 hectoliters until the 1960s.

The beer output developed in the company's history as follows: 1898 (2000 hectoliters), 1908 (5000), 1911 (12,000), 1930 (27,000), 1960s (over 200,000), 1979 (about 200,000), 1987 (211,000), 2010 ( 190,000), 2015 (185,000). The raw materials used traditionally come mainly from the region. The brewery belongs to the Free Brewers . Since 1956, the brewery has shared its employees in various forms of profit. The brewery has been a member of Slow Brewing eV since 2014

The Distelhäuser Brauhaus restaurant , the butcher's Bauer's Brotzeit and the Alte Füllerei event center are located on the brewery site in Distelhausen . The service center in Erlenbach was closed at the beginning of 2019.
