From 1927 to 1929 Schuitz completed an apprenticeship as an upholsterer , saddler and interior designer in Bickern. During this time he received drawing lessons from the sculptor and commercial instructor Wilhelm Braun , who recognized his talent early on. He recommended him for a scholarship, with the help of which he could study at the Werkkunstschule Dortmund from 1930 to 1932 . From 1933 he lived in Italy and traveled the country. This resulted in lithographs , 20 of which were printed as a book in Palermo . From 1934 to 1935 he studied with a scholarship at the Academy of Fine Arts in Rome and worked from 1936 to 1939 as a restorer and church painter in Rome for the Vatican.

After military service from 1940, war injuries and American captivity until 1945, he opened a painting and arts and crafts studio on Hauptstrasse in Wanne-Eickel in 1946 and worked as a freelance artist and from 1947 to 1957 as a lecturer at the adult education center in Wanne-Eickel. His wife ran the shop on Hauptstrasse until 1953, which also offered wooden figures and decorative objects carved by Schuitz, as well as watercolors and drawings. From the mid-1950s to 1965, Schuitz carried out work for the Ruhrknappschaft on 13 of their newly emerging pension and sanatoriums throughout Germany.

From 1956 to 1992 he ran a studio on Claudiusstrasse in Wanne-Eickel / Herne-Wanne. The focus of his work was art in architecture, using various techniques typical of the time such as mosaic , sgraffito and stained glass . His works can be seen in numerous public buildings. Edmund Schuitz has also completed art in building projects in America, Italy and Brazil. In 1961 he won a competition in Clifton, USA, for a large stained glass window with Saint Catherine. In the 1970s he turned increasingly to etching , cutting and printing techniques.
