Breakfast cereal
Breakfast flakes , breakfast cereals or cereals are cereal products that are infused with water , milk or fruit juice and make a porridge . Traditional products are corn flakes , oat flakes and muesli . Today the food industry produces a variety of other sugared products.
Types and ingredients
There are several types of products available on the market. The main components are cereals such as oats , wheat , maize , spelled , barley , rye and rice . In addition to pseudo cereals like amaranth , quinoa and buckwheat used. The designations are unprotected and are not described in the German Food Book.
cereal
Ready-made muesli mixes usually consist of oat flakes , flakes from other types of grain and other ingredients. They can contain all of the products listed below.
Fruit cereal
Fruit muesli also contains dried fruit, such as raisins and other dried fruit .
Crunchy cereal
For the Knuspereffekt (common name component English Crisp ) are coated oatmeal or other components with sugar.
Crispy cereal products
Flakes
Flakes are made in two different processes. In the conventional process, the grains are coarsely chopped up. This creates the so-called grits, which are cooked with malt, sugar and salt and then rolled out into flakes and roasted. This corresponds to the classic production of corn flakes .
Flakes can also be produced by extrusion . In this process, a mass of semolina is cooked, which is pressed under pressure through an extruder . The extrudates are then often called extruded cereals .
cornflakes
Cornflakes consist of boiled, rolled and then dried corn. They are often coated with sugar, such as frosties . In addition to the taste, they stay crispy longer in the milk.

- Amaranth : Puffed amaranth is the eponymous component of many amaranth mueslis , the main component of which is oat flakes.

Further ingredients
In addition to cereals, many products contain glucose syrup and cocoa , as well as food additives such as vitamins , food colors and flavors . Mueslis also contain dried fruit and nuts .
