The Fürst Carl Schlossbrauerei Ellingen (temporarily Princely Brewery Ellingen ) is a particularly regionally active brewery in Ellingen in the Middle Franconian district of Weißenburg-Gunzenhausen and has existed since at least 1690 . It is located within the baroque Ellinger palace complex . The company produces 12,000 hectoliters annually (as of 2010). The logo (medallion) of the brewery is decorated with a rider (Field Marshal Carl Philipp von Wrede) on a white horse. He wears a blue and white uniform.

For building complex of the brewery and the brewery restaurant belongs Prince Carl Bräustüberl and Prince Carl Bräuladen . A taproom already existed in the so-called forerunner building before the brewery was built in 1720.

Beginnings and German Order

The first documentary mention of the brewery in the Deutsch-Orden -Kommende Ellingen is said to come from the year 1690. It is believed that there was a brewery there much earlier. Around 1690 the brewery was located near the wagner and blacksmith workshop in the forecourt of the old castle. A liter of beer was sold for 5 pfennigs at the time. The staff was rewarded not only in cash but also in kind.

From the years 1706 to 1716 it is handed down that the brewery also bought beer from other breweries due to the great demand. In 1723, master brewer Franz Keller built today's brewery building opposite the previously newly built castle in the same length. In 1750 it was planned to demolish the middle part of the brewery wing, in 1785 a new brewery was planned. Neither was implemented.

In 1796 Ellingen was occupied by Prussian troops who introduced a beverage tax of 18 kreuzers per pail of beer with the Ohmgeld ; which had a negative impact on the brewery. In 1799 the Teutonic Order complained about the extremely poor quality of the malt and brewing wood, the purchase and sales prices and the issue of free beer during an examination of the "profitability". In 1805 the brewery received a new malt kiln requested in 1795 .

In 1799 a commission of inquiry rated the beer as "very renowned". At that time the master brewer was Franz Sedlmayr, the father of the later owner of the Munich brewery Spaten , Gabriel Sedlmayr the Elder. Ä.

From Wred's time

The Bavarian King Maximilian I Joseph thanked his general Carl Philipp Fürst von Wrede (1767–1838) for his merits with the Ellingen throne and man fief and on May 24, 1815 left the Ellingen palace and brewery to him.

A special cooling device is said to have been used for the first time in the Fürst Carl Schlossbrauerei Ellingen around 1800. The Nuremberg brewery professor Johann Baptist Herrmann wanted to increase the efficiency of the wort cooling (the wort was in a wooden cooling ship and therefore only cooled down slowly) with a wooden turnstile that set the wort in motion. The drive mechanism, which basically corresponded to that of a tower clock , was maintained by the local master watchmaker . The Herrmann cooling device was very successful in operation for 47 years.

The brewery is a founding member of the Bavarian Brewers' Association, which was established in 1880 . In 1886 the malt kiln was increased. In 1890 an ice cellar extension was built on the north-western extension of the south wing, which was demolished between 1815 and 1820 . The cold room in the east wing was renewed and the Prussian cap vault was removed.

The buildings and extensions erected in 1945 changed the southern front of the brewery in such a way that only the gate from the south remained unchanged. In 1967 the roof turret was broken off. The eastern corner pavilion was converted into the Fürst Carl Bräustüberl in 1978. The western corner pavilion is used as an administration and Fürst Carl brewery.

In 2010, the Fürst Carl Schlossbrauerei was the first brewery in Germany to use 3D labels. The beer crates the variety Prince Carl Schlossgold were 3D glasses included.

Summer toboggan run

The brewery operates a summer toboggan run with two 500-meter-long runs in the neighboring municipality of Pleinfeld at the industrial park . The facility of the lift also includes a restaurant, a wildlife enclosure and a mini golf course.
