Ernesto Schlegel

Ernesto Schlegel (* 1923 ; † November 5, 1997 ) was a well-known Swiss chef .

Life

Ernesto Schlegel was head chef at the Hotel Schweizerhof in Bern from 1968 to 1976 . Among other things, Dieter Müller (1971) learned from him .

From 1976 to 1990 he was head chef at the gourmet restaurant Du Théâtre in the Hôtel de Musique in Bern, which he helped to gain international reputation:

"I learned the craft ... from ... the legendary Don Ernesto Schlegel, who worked at the Du Théâtre at the time and was probably the most famous chef in Switzerland."

Even Franz Feckl was 1977 Du Theater his student. Schlegel also worked at the Ritz Hotel in Barcelona , the Palace Hotel in St. Moritz and the Claridge's Hotel in London .

From 1966 he was Vice President and from 1968 to 1984 President of the Cercle des Chefs de Cuisine Berne (CCCB). In 1986 he published his cookbook with the title “Feu sacré - A life for the art of cooking”. He preferred French cuisine .

Private

His brother Otto Schlegel (1920–2017) was also head chef. He cooked for 30 years at Gstaad Palace (in winter) and Palace Luzern (in summer). Their siblings Fidel and Ida as well as Otto's son Othmar Schlegel (* 1951) were also chefs.

Ernesto Schlegel died in 1997 after a serious illness.

Honors

In 1969 he received honorary membership of the Israeli Cooking Association, 1970 that of the “ Meistervereinigung Gastronom Baden-Württemberg eV” and the Japanese Cooking Association, 1972 that of the “Kochklubs Gastronom Hamburg eV”, 1973 honorary membership of the CCCB with a certificate of merit, and 1978 honorary membership of the Austrian Cooking Association ( ÖKV). On March 22, 1982 he was awarded the Knight's Cross ("Chevalier") des Ordre du Mérite agricole by the French government . After his resignation as CCCB President, he was made honorary presidency of the organization in 1984. In 1987 he received the “Grand Prix de la Gastronomie” from the “ Club Prosper Montagné ”. On January 6, 1989, he became an honorary member of the Association of German Chefs and on September 18 of the same year he became a member of the " Stuttgart Cooking College ".
