The sport policeman from Frabosa Sottana debuted in 2007 in Igls in Skeleton European Cup , where he was 33. Even in the following two races in Koenigssee and on his home track in Cesana Torinese he corrected himself up on the ranks 18 and 12. In the junior The 2008 World Championships in Igls took Mulassano 22nd. A first national success followed at the 2008 Italian Championships in Cesana, where he came second behind Nicola Drocco . Until the 2010/11 season, the Italian continued to compete in the European Cup and in 2008 for two races in the equivalent America's Cup , without ever finishing in the top ten. For the 2010/11 season he moved up to the Skeleton Intercontinental Cup and finished between 14th and 18th place in all races of the season. The highlight of the season was the 2011 Skeleton World Championship in Königssee, where Mulassano finished 28th. In addition, he was able to win the silver medal again at the Italian championships in Cesana behind Maurizio Oioli .

In December 2011 , Mulassano made his debut in the Skeleton World Cup and finished 21st in Igls, which, along with another 21st place in St. Moritz, remained his best season result in the World Cup. In two starts in the Intercontinental Cup in Calgary , he achieved a 12th and 10th place and thus his best result in an international racing series. In the following season he took part in eight of the nine World Cup races and finished between 20 and 28, making him 26th in the overall World Cup as in the previous year. At the European Championships he was 15th and at the World Championships 29th. In the winter of 2013/14 Mulassano was mainly active in the European and Intercontinental Cup , but could not place better than 17th place. At the World Cup he only took part in the last race of the season in Königssee, which also counted as the European Championship , in which he was 17th. From 2012 to 2014 he also won two further silver and one bronze medals at the Italian championships. In 2014/15 he first finished four races in the Intercontinental Cup in positions between 13 and 17 and then switched back to the World Cup , where he again missed the top 20 in three races in January.

After the 2014/15 season, Giovanni Mulassano switched to bobsleigh.
