Ludwig Heer (born April 13, 1981 in Geislingen an der Steige ) is a German chef .

Life

Heer attended the Michelberg high school in Geislingen. He then completed an apprenticeship as a chef from 1997 to 2000 in Rolf Straubinger's Staufeneck castle restaurant in Salach , which has been awarded a Michelin star . There he expanded his knowledge and was head pastry chef until 2001 .

In 2001 he started as one of the youngest entremetiers in Harald Wohlfahrt's Black Forest parlor , which has been awarded three Michelin stars, in the Hotel Traube in Tonbach . In 2002 he completed five intensive courses in the USA at the Culinary Institute of America in New York and then worked for a year and a half as a pastry chef at the Ritz-Carlton Hotels in Key Biscane and South Beach .

After his return to Germany, he started his own small praline factory in 2006. He passed his master chef examination in 2007 with a grade of 1. Heer has been a speaker at the DEHOGA Academy since 2007 . In 2013 he took over the restaurant 19 of the Bad Überkingen golf club , which he has since given up.

In his parents' business, the Alte Post in Kuchen , he worked as a sous- chef from 2002 to 2004 and as a chef from 2005 to 2006 , until he finally took it over from his parents in 2016.

In 2010 Ludwig Heer published his first cookbook entitled Ludwig Heer & friends . The second cookbook will follow in 2013 under the name Ludwig Heer - smart recipes for every occasion . In addition to his work as a cook, Heer also develops products for the needs of professional catering.

He has been a partner of Giulia Siegel since 2016 .

On September 29, 2009, the SWR Landesschau broadcast a portrait of Heer for the first time on the occasion of his participation in the Bocuse d'Or . On May 22, 2010, Heer was seen for the first time in the program Kaffee oder Tee in Südwestrundfunk (SWR), where he was part of the program in around 80 appearances until 2016. In 2011, Heer cooked in a guest appearance at Johannes B. Kerner . In 2013 he took part in the VOX program The Perfect Dinner - Who is the Professional? part, disguised as "Tom the fitness trainer", where he took second place. In the same year, the SWR broadcast a report about the parents' restaurant, the Alte Post in Kuchen. In the ZDF program Kerners Köche , Heer has been part of a changing team of top German chefs since 2017. With his partner Giulia Siegel, Heer took part in the program Das Sommerhaus der Stars - Kampf der Promipaare in 2017 .
