Michel Bras

Michel Bras (born November 4, 1946 in Gabriac , Aveyron department ) is a French chef . Bras is one of the most influential chefs in France and is considered unusually creative. He is known for using native plants and flowers.

Life

Bras is the son of farrier Marcel (1921–2016) and Angèle Bras, the landlady of an auberge in Laguiole . He is largely self-taught   and taught himself culinary techniques in a "rather scientific" way. In 1992 he and his wife Ginette opened their modern restaurant Le Suquet   near Laguiole in the south of France, with a panoramic view of the Aubrac plateau . It was awarded three Michelin stars from 1999 . In 2009, the British gourmet magazine “Restaurant” voted Le Suquet the seventh best restaurant in the world. Le Suquet refers to a hill in the south of France as well as a Catalan fish dish.

In 2009, Michel Bras handed the restaurant over to his son Sébastien (* 1971). Director Paul Lacoste portrayed the generation change in the documentary Entre Les Bras (2011). Michel Bras continues to work in the restaurant every day.

In addition to his flower and vegetable dishes, Bras is also considered to be the inventor of the smeared soup and puree dots that add additional flavor notes to a dish. A dish he created and often copied in 1981 is the dessert coulant au chocolat , a cake with a warm, liquid chocolate filling.

In his spare time he has been running since he was 18 years old, another hobby is photography. Bras always has a notebook with him to record new ideas.

In September 2017, Sébastian Bras announced that, in consultation with his family, he would consciously forego Michelin stars in the future. The three stars mean too much "pressure" in the long run, so he wants to be "freer". The waiver of the highest award was described as a "bang in the gourmet scene", since according to Michelin it has so far been "unprecedented" and "unique" not to change the offer or to close the house afterwards, but simply to carry on. “The guide is not made for chefs, but for customers,” explained Guide Michelin. In its 2019 edition, Michelin ignored the Bras family's request and re-listed the restaurant with two stars. Sébastien Bras reacted “skeptically” to the “contradicting decision” of the Michelin Guide.

Japan

Michel Bras and his son Sébastien opened a second restaurant called Michel Bras Toya Japon in 2002 in the Windsor Hotel Toya Resort & Spa on Hokkaidō , Japan. The Michelin Guide awarded it two stars in 2016. They fly to Japan every November to instruct the kitchen brigade on their new dishes. During the winter season, the restaurant will be closed for five months from November.

In 2008, in cooperation with the Japanese knife manufacturer KAI , the farrier's son Bras designed high-tech knives for haute cuisine .

Brasseries

Bras then developed the concept of fast, inexpensive and good cuisine with regional specialties and offers it in several brasseries . At the end of May 2014, the Musée Soulages opened in Rodez , which is dedicated to the works of the abstract painter Pierre Soulages . There are small dishes for visitors and passers-by in the restaurant and desserts in a café. Sébastien Bras' brother-in-law Christophe Chaillou is in charge of the kitchen.

He opened two culinary fastidious restaurants called MiWaM in the gourmet metropolis of Lyon , one in the Villeurbanne district and one in Lyon-Part-Dieu. The ingredients consist of organically grown vegetables and wholegrain cereals from the region, the snacks are rich in vitamins and protein, low in fat and spicy.

Brasserie Espace Gourmand is located at the Brocuéjouls rest area on the A75 with a view of the Millau Viaduct . A specialty of the house are conical waffles, called "capucins" after the tapered hoods on the capuchin habit . Bras specially developed a cone-shaped waffle iron , the waffles of which are filled with many culinary variations. The chef is Michel Bras' brother André.
