The Nobling is a white wine that is almost exclusively in the Markgräflerland in Baden is grown. It is a new breed by Johannes Zimmermann, which was created by crossing the grape varieties Gutedel and Silvaner in 1940 at the state viticulture institute in Freiburg im Breisgau . In 1971 it was entered in the list of varieties . The information provided by the breeder about the parents of the cross has been confirmed by DNA analysis in the meantime.

Despite its inherently high quality, the variety has not become particularly well known to this day. It was therefore initially used as a high-quality basis for sparkling wine , as it can simultaneously reach high must weights with high acidity (→ acidity (wine) ) . However, due to the sharp decline in the area under cultivation, the use for sparkling wine is now almost impossible. Nobling has a delicate, mirabell to peach-like aroma .

Nobling needs the warm, humid climate of the Baden region and has a relatively low resistance to winter frost. Characteristic for the vine is its very irregular budding in spring and the tendency to develop strong tendrils. In contrast to Burgundy varieties, for example, the tendrils lignify in the late year. As a result, the manual work required for winter cutting in wire systems is around three times longer than with Burgundy varieties and around twice as long as with the Gutedel variety.

In addition to the relatively high manual workload, the vine also needs good to very good locations to achieve high must weights, unlike the Müller-Thurgau variety, which has significantly fewer demands on the location. This means that the Nobling variety is in competition with the Burgundy varieties, with which significantly higher revenues can be achieved with less manual labor in the prime locations that are suitable for Nobling.

The grape variety is a variety of the noble grapevine ( Vitis vinifera ). It has hermaphroditic flowers and is therefore self-fruiting. In viticulture , the economic disadvantage of not having to grow male plants that produce yield is avoided.

The fact of having to rely on good locations, coupled with the low level of awareness on the market, resulted in a massive decline in cultivation area after 1990: in 2007 only 65 hectares were planted with Nobling compared to approx. 95 hectares in 2000 after 128 hectares were surveyed in 1994. In 2015, the variety was practically only grown in Baden.
