Ranch dressing [ ˈræntʃ.dresɪŋ ] ( listen ? / I ) is a seasoning sauce, invented in California in 1954, made from buttermilk or yogurt , mayonnaise , chopped onions , garlic and herbs . It is one of the best-selling salad dressings in the United States today and is also used as a dip , for example for veggie platters . Audio file / audio sample

Composition and use

Ranch dressing is based on buttermilk or yogurt, mayonnaise, rapeseed oil , onion pieces, garlic as well as lovage and parsley as an addition of herbs. Since there is no binding recipe, the specific composition can be changed and is subject to individual preferences in private production. In her USA Cookbook, Sheila Lukins names natural yoghurt, mayonnaise and buttermilk in equal parts, onions, garlic, salt, pepper, chives and, optionally, other herbs and bacon as the basic recipe .

In addition to being used as a salad dressing or dip with veggie platters , ranch dressing goes well as a seasoning sauce on burgers and American pizzas, as well as with meat , potato and pasta dishes .

History, distribution and variants

In 1954, Steve and Gayle Henson opened a gas ranch near Santa Barbara , California and named it "Hidden Valley Ranch" (in German, "Hidden Valley Ranch"). There they served the guests a salad sauce they had created themselves, which was very well received and was therefore soon available through their own mail order business . Due to the increasing demand, a factory had to be built to manufacture them in the early 1970s . The Californian chemical company Clorox has been a manufacturer and marketer of ranch dressing since the 1970s and has further developed it under the registered trademark " Hidden Valley - The Original Ranch ", making it one of the best-known and best-selling salad dressings in the USA.

In 1982 began an actor and amateur chef Paul Newman next to the production and marketing its own version of ranch dressing under the name "Newman's Own Ranch Dressing" , which also continued and since 2012 after Newman's death in 2008 in an organic version available is.

In Germany you can buy imported products from the USA in the delicatessen departments of some supermarkets . The brand name has not been protected in Germany since 2001. The company Carl Kühne KG from Hamburg produces a “spicy ranch dressing” which, according to its own information, is based on the American recipe, but differs from it because it also contains tomatoes , paprika and red pepper and is cocktail-colored instead of white . This variant is not included in the book Ranch Dressing Greats: Delicious Ranch Dressing Recipes , which according to its own information describes the top 44 ranch dressing recipes in the USA.
